Lately, Caleb and I have been shopping for some of our groceries at Whole Foods. We love going down the baking/spice aisle because we are always inspired to create new kinds of dishes! This past weekend, we picked up the Whole Foods Organics spice called "Thai." With some other delicious ingredients, we whipped up this delicious Thai Coconut Curry!
Ingredients/Shopping List:
2 cups chicken stock
3 boneless chicken breasts
8 oz coconut milk
1/2 onion
1 bell pepper
Whole Foods Organics - Thai seasoning
2 cups of white rice
Garlic powder
Cumin
Salt
Flour
Olive oil
Water
To add spicy flavor:
Sriracha
Chili flakes
Instructions:
1. Make 2 cups of white rice
2. Slice onion and bell pepper, jullienned
3. Cut chicken breasts in to medium size pieces. Coat the chicken with Thai seasoning and a Tbsp of flour
4. Saute onion and bell pepper in a Tbsp of oil then add chicken once vegetables begin to soften
5. For flavor additions, add chili flakes, salt, pepper, cumin, and garlic to the vegetables
6. After chicken browns, add 2 cups chicken stock and 8 oz of coconut milk, let simmer
7. Add a Tbsp of flour and a Tbsp of cool water together then pour in to the curry pot to thicken mixture
8. Service coconut curry over white rice.
9. Add Sriracha on top for extra spice
